Dish of the Week
Cappuccino


INGREDIENTS:

  • 1 ½ cups skim milk
  • 2 egg whites
  • 1 tablespoon sugar
  • 4 ½ cups freshly brewed hot coffee
  • 2 tablespoons shaved semisweet chocolate
  • 6 (3 inch) sticks cinnamon
INSTRUCTIONS:

  1. Place milk in a small saucepan, place over low heat stirring constantly until mixture reaches 120 to 130 degrees. Remove from heat.
  2. Place egg whites in container of an electric blender, top with cover, and process at high speed 10 seconds or until frothy.
  3. Slowly add hot milk and sugar, blending on high speed for 30 seconds.
  4. Pour ¾ cup hot coffee into 6 mugs.
  5. Pour milk mixture evenly into coffee.
  6. Top each serving with 1 teaspoon chocolate, and add 1 cinnamon stick.
YIELD:

6 servings (57 calories per 1 cup serving)
